      The Plant

      Citrus aurantifolia (Key Lime or Mexican Lime) is a small, thorny evergreen tree from the Rutaceae family. Originally from Southeast Asia, it spread via the Arab trade routes to the Mediterranean and then on to the Americas. Unlike the larger Persian lime (Citrus latifolia), the Key Lime is smaller, seedier and more aromatic – producing a more complex essential oil.
